Chicken Cacciatore Arrabiata

- Fresh chicken – legs and thighs - skin peeled off (if desired)
- Extra virgin olive oil – 1⁄4 cup
- Sliced red onions – 1 whole red onion
- Garlic – peeled and crushed – 8 cloves
- Hot Red Peppers – 3 or 4 whole peppers – crush to heat taste
- White wine – ½ cup
Peel off excess chicken skin (if desired). Add chicken to large 8 qt pot. Add olive oil. Stir/shake vigorously to coat chicken. Place on grill. Let simmer. Slice red onions, garlic, peppers. Put to side. Continuously stir chicken until it starts to brown. Add onions, garlic, peppers. Stir until all mixed. Cover and let simmer for 25-30 mins. Stirring occasionally to even out. Serve and enjoy!
Spaghetti with Tuna, Anchovies and Capers

- Fresh spaghetti – 1 box – 16 oz
- Salt – 1 tsp
- Tuna Fish – 1 can (oil or water) – drained
- Anchovies – 3 or 4 fresh or canned anchovies
- Capers – 2 tbsp
- Extra Virgin Olive Oil – 1⁄4 cup
Boil water. Add Spaghetti. Add salt. Stir repeatedly. Cook to taste. 5-7 mins. While pasta is cooking, add ½ cup olive oil to frying pan. Drain tuna. Mash with a fork to separate. Add to frying pan. Chop anchovies. Add to frying pan. Add capers to frying pan with a pinch of salt. Sautee tuna, oil, anchovies, capers and salt over med heat for 7-10 mins. Stirring occasionally to blend evenly. Drain cooked pasta and place back in pot. Add frying pan of oil, tuna, capers, anchovies into pot. Mix thoroughly. Season with salt and pepper to taste. Serve and enjoy!
Green Bean Salad

- Fresh string beans
- Fresh Mint – 6-8 leaves
- Salt – 1 tps
- Lemon – 1 whole
- Garlic – 4 cloves
Steam green beans until tender. Drain. Add to large mixing bowl. Let cool. Slice garlic very thin. Add to mixing bowl. Cut lemon in half and squeeze juice from both halves into strainer (to eliminate seeds) over mixing bowl. Discard squeezed halves. Add salt and mint. Mix everything. Serve and enjoy!

Steak Pizzaiola

- Steak - sliced thin and pounded once or twice
- Extra virgin olive oil – 1⁄4 cup
- Fresh tomatoes (red, yellow and orange)
- Fresh garlic – 10-12 cloves
- Fresh basil – 10 large leaves
- Salt – 1 tbsp
- Fresh parsley – 1 small bunch
- Parmesan cheese – 1 cup
Peel and crush garlic. Place into pot. Add olive oil. Slice tomatoes. Add to pot. Add salt, basil and half the parsley. Simmer over med heat for 10 mins until tomatoes start to cook down. Place thinly sliced steak on grill over med heat. Let cook for 2-3 mins. Then turn and cook 2-3 min on other side. Add steak to tomato pot. Mix everything. Lower heat and simmer for 35-40 mins. Add cheese. Mix until cheese is melted. Sprinkle the rest of parsley on top. Serve and enjoy!
